Are cherries still around? I hope so. I made this salsa last month at the height of cherry season, but I think you can still easily find cherries in the supermarket. Here’s a salsa with a sweet accent but one that’s also got a sassy attitude from the bits of jalapeno mixed throughout. Try this over a grilled piece of salmon, chicken, or pork or serve with tortilla chips for a little something out of the ordinary. Pineapple-Cherry Salsa Printable Recipe Here (makes about 4 cups) 3 cups chopped pineapple 1 cup pitted cherries, chopped 1 jalapeno, minced 1/4 c. minced cilantro 1/4 c. bell pepper – red, orange, yellow or green 1/4 c. cup minced onion juice of 1 large lime Mix everything together in a bowl (the pineapple will darken) and serve.
