Got goat cheese? Got bread? Then get some zucchini, herbs, garlic and olive oil and you’ve got the makings of this bruschetta (pronounced broos KETTA please). This made for one quick and delicious lunch, but if you serve it on smaller pieces of bread, then you’ve got lovely crostini that would be great as before dinner munchies with drinks.
Start with some plain goat cheese, and mix it with some chopped herbs (in this case, fresh thyme) and minced garlic. Hold aside until rest of dish is ready.
Next take some good Italian or French bread, slice it up and place it on a hot grill until it gets nice grill marks.
Remove bread from the grill. Slice the zucchini, toss with some olive oil, salt, pepper, garlic and herbs (thyme again).
Place zucchini on the grill and cook through, making sure the grill is turned up enough to get those lovely grill marks.
Slather a little goat cheese on the bread, and top with the grilled zucchini. Buon Appetito.
